Analisis Komparasi Kualitas Madu di Kudus Raya Pantura Jawa Tengah

Abstract


This study aims to determine the quality of honey based on acidity levels, on the acidity of honey with the acid-base titration method, the honey used is honey from 3 districts (Jepara, Kudus, Pati) by determining the samples have dark to light colors and different concentrations, different methods determining the sampling test using purposive sampling on random samples from various regions. Quantitative data analysis was used, the acidity level of honey was analyzed using Analysis of Variance (ANOVA) and Ducan's Multiple Range Test (DMRT), research results from Kudus 56mL NaOH/kg, & 57mL NaOH/kg, Jepara 33mL NaOH/kg & 34mL NaOH/kg, Kudus 27mL NaOH/kg & 28mL NaOH/kg. Thus it can be concluded that the quality of kasaman is getting better based on the Indonesian National Standard (SNI) maximum limit of 50mL NaOH/kg. With this research, it is hoped that consumers will not hesitate in choosing the quality of honey.
